Crock Pot Wednesday!

Alright it's Crock Pot Wednesday! This is actually one of my Mom's recipes; it is super easy and very tasty. I think that Kyle would eat this everyday if he could.

Crock Pot Chicken
1-2 pounds of boneless, skinless chicken breasts
1 can cream of chicken soup (fat free works)
6 oz cream cheese (fat free works here too)
1 packet dry Italian Dressing mix
1/4 c. cooking sherry

Place chicken breasts and Italian dressing mix in the crock pot and cook on low for 6-8 hours (or on high 2-4) About an hour before eating, shred chicken and return to crock pot. In a small saucepan combine cream cheese, soup and sherry. Heat until incorporated, then mix in with the chicken in crock pot. When chicken mixture is heated through serve over rice and enjoy!
