So I think it's time for Mary to come inside for the winter for a few reasons.
1- Kyle saw a mouse last night; yuck!
2- I think I'm feeding all of the neighborhood cats currently by feeding her outside.
3- I don't want her to freeze to death.

Does anyone in the GR area know of a place to get discounted vet services/vaccines??? The Humane Society has discounted their low income vaccines due to lack of funding :(

A New Favorite Recipe: Slow Cooker Tamale Pie

  • 1 pound ground beef
  • 1 teaspoon ground cumin
  • 1/2 teaspoon salt
  • 1/2 teaspoon chili powder
  • 1/4 teaspoon pepper
  • 1 can (15 ounces) black beans, rinsed and drained
  • 1 can (14-1/2 ounces) diced tomatoes with mild green chilies, undrained
  • 1 can (11 ounces) whole kernel corn, drained
  • 1 can (10 ounces) enchilada sauce
  • 2 green onions, chopped
  • 1/4 cup minced fresh cilantro
  • 1 package (8-1/2 ounces) corn bread/muffin mix
  • 2 eggs
  • 1 cup (4 ounces) shredded Mexican cheese blend
  • Sour cream and additional minced fresh cilantro, optional

Directions

  • In a large skillet, cook beef over medium heat until no longer pink; drain. Stir in the cumin, salt, chili powder and pepper. Transfer to a 4-qt. slow cooker; stir in the beans, tomatoes, corn, enchilada sauce, onions and cilantro. Cover and cook on low for 6-8 hours or until heated through.
  • In a small bowl, combine muffin mix and eggs; spoon over meat mixture. Cover and cook 1 hour longer or until a toothpick inserted near the center comes out clean.
  • Sprinkle with cheese; cover and let stand for 5 minutes. Serve with sour cream and additional cilantro if desired. Yield: 8 servings.
I discovered this recipe in the latest Taste of Home magazine and it is great! We all loved it and it was super easy to prepare. It's the kind of recipe that you can change up to fit your tastes. I omitted the diced tomatoes because Kyle doesn't like tomato chunks. I've also made it with chicken instead of hamburger and it was yummy that way too :) Enjoy!

Judah was a very good sport considering most of the formula went down his neck rather than into his tummy.

Poppy Seed Salad Dressing

This is the recipe for one of our favorite salad dressings. Spinach has been very reasonably priced lately and we have been having lots of salads with our meals. One of our favorite combinations are spinach, crumbled bleu cheese, craisins and toasted walnuts with this dressing. But really you can just throw together whatever you have laying around :)

Creamy Poppy Seed Dressing:
- 1/3 c. white sugar
- 2/3 c. whole milk plain yogurt*
- 1 T. poppy seeds
- 3 T. red wine vinegar

* The original recipe called for 1/3 cup of mayo and 1/4 cup of milk. We like it better with the yogurt; plus it makes it a tad healthier :) Either way is tasty though!

Is the Pill Abortive?

Is the pill abortive? If we believe that life begins at conception, then Randy Alcorn says yes. This is something that Christians need to seriously consider. Unfortunately, many young couples see the pill as a valid form of birth control, all the while ignoring the fact they may be destroying a human being created in the image of God. I'm not sure this is a closed case--the medical community seems split. Needless to say, the medical community's inability to decisively determine how the pill works ought to caution Christians against using it.
